Shrove Tuesday aka Pancake Day

A little history:

"Shrove Tuesday (also known as Pancake Day and Mardi Gras) is the day preceding Ash Wednesday, the first day of Lent. Shrove Tuesday is observed mainly in English speaking countries, especially Ireland, the United Kingdom, Australia, New Zealand, Canada and the United States but is also observed in the Philippines and Germany. Shrove Tuesday is linked to Easter, so its date changes on an annual basis.

In most traditions the day is known for the eating of pancakes before the start of Lent. Pancakes are eaten as they are made out of the main foods available, sugar, fat, flour and eggs, whose consumption was traditionally restricted during the ritual fasting associated with Lent." ~ Wikipedia

I don't normally observe this day but today I felt compelled to make pancakes for supper.  I'm not too sure why, maybe it was the challenge of finding a new recipe and trying it out.  Anyway, here is what I decided to make.  I got this recipe from the Kraft Canada site.

My pancakes NEVER turn out round.

 Looking good!

This is how I like mine!

A frozen berry mix from Costco with banana's

Brown Sugar & Cinnamon Pancakes

1/2 C Flour
1 Pkt creamy wheat cereal (enriched with farina) hot cereal (Cream of Wheat)
2 Tbsp brown sugar
1 Tbsp baking powder
1 tsp ground cinnamon
1 egg
1 C milk (I used skim)
2 Tbsp non-hydrogenated margarine, melted

Mix the first 5 ingredients in medium bowl

Whisk egg, milk and margarine until well blended.  Add to dry ingredients; stir just until blended.  Let stand 5 minutes.

Heat large skillet sprayed with cooking spray on medium heat.  Ladle scant 1/4 cup of batter into skillet for each pancake; cook 2 to 3 minutes or until bubbles from on tops, then turn over to brown other sides.
